Istria iota

200 grams of dried beans
500 grams of cabbage
300 grams of potatoes
400 grams of dried fins or other dried meats
80 grams of smoked bacon (pancetta)
3 cloves garlic
salt
pepper
corns
2 bay leaves


The cleaned beans soaked briefly boil, drain it and cook again.

In a separate saucepan, bring to boil washed sauerkraut and spareribs.

When the beans half soft, add it together with liquid cabbage. Add a bay leaf, pepper, and salt together bacon and garlic.

Stir in potatoes cut into cubes and continue to cook until everything is tender.

serving
Take meat out, cut and serve separately with iota.
